Banana-Oat Snackers
This is my favorite easy-peasy recipe for a snack that also happens to be healthy! It's a whole food, plant based, no oil snack perfect for those who are trying to eat well but also enjoy a little sweet treat!

Ingredients
2 medium ripe bananas
1/2 cup old-fashioned oats
3 T raw cacao nibs
3 T sliced almonds
3 T raisins
1/4 tsp cinnamon
1/8 tsp ginger
1/8 tsp nutmeg
Pinch salt
Preheat oven to 350 degrees. Mash bananas with a fork in a large mixing bowl. Add the remaining ingredients and mix well. Spoon about 2 T of mixture in cookie mounds on a baking sheet covered with a silicone mat or parchment paper. Alternatively, you can spoon 2 T of the mixture into the wells of a silicone muffin pan. Bake for 18-20 minutes, until edges begin to brown. Let cool in the pan before loosening with a spatula. Store in an airtight container in the fridge for up to 5 days. Makes about 10-12 cookies.
